Ingredients

Scale

Meat

  • 1 to 1.5 pounds flank or skirt steak

Vegetables

  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 large onion, thinly sliced

Marinade

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Other

  • Flour or corn tortillas, for serving
  • Optional garnishes: chopped cilantro, sliced jalapeños, diced avocado, sour cream, shredded cheese

Instructions

  1. Prepare the Marinade: In a bowl, mix olive oil, lime juice, minced garlic, cumin, chili powder, smoked paprika, salt, and pepper. This marinade is packed with flavor and helps tenderize the steak, infusing it with bold Tex-Mex aromas.
  2. Marinate the Steak: Place the steak in a shallow dish or resealable bag, then pour the marinade over it. Make sure the steak is evenly coated. Let it sit for at least 15 minutes, or up to 2 hours to deepen the flavor.
  3. Slice the Vegetables: While the steak marinates, cut the bell peppers and onions into thin strips for quick, even cooking. This ensures a perfect balance of tender and crisp in every bite.
  4. Cook the Steak: Heat a large skillet or grill pan over medium-high heat. Remove the steak from the marinade, letting excess drip off, and cook for 3-4 minutes per side for medium-rare, or longer if preferred. Transfer to a cutting board and let rest for 5 minutes to lock in juices.
  5. Sauté the Vegetables: In the same pan, add a drizzle of olive oil if needed and toss in the peppers and onions. Cook for 5-7 minutes until softened and slightly caramelized, stirring occasionally for even cooking.
  6. Slice the Steak & Combine: Cut the rested steak against the grain into thin strips. Add steak back to the vegetable mixture just to warm through, tossing everything together so the flavors meld.

Notes

  • Slice the steak against the grain to keep it tender and easy to chew.
  • Allow the steak to rest after cooking to lock in juices for better flavor.
  • Use high heat when cooking steak to achieve a good sear and caramelization.
  • Warm tortillas before serving to enhance wrapping and eating experience.
  • Use a colorful mix of bell peppers for best texture and visual appeal.
