Quick and delicious Steak Bites made with tender sirloin or ribeye, seared to perfection with garlic and onion powder seasoning. These juicy, flavorful bites cook in under 15 minutes and make a versatile meal or appetizer that’s perfect for any occasion.

Ingredients

Scale

Steak and Seasoning

  • 1 lb top sirloin or ribeye steak, trimmed and cut into 1-inch cubes
  • 2 tbsp olive oil, divided
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt, to taste
  • Freshly ground black pepper, to taste

Optional Finishing Touches

  • 1 tbsp butter
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Choose and Prep Your Steak: Start with a good-quality steak trimmed of excess fat. Cut the meat into uniform bite-sized cubes, roughly one-inch pieces, to ensure even cooking. Let the steak pieces sit at room temperature for 20-30 minutes before cooking to help them cook quickly and evenly.
  2. Season the Steak Bites: In a bowl, toss the steak cubes with 1 tablespoon olive oil, garlic powder, onion powder, salt, and freshly ground black pepper. This simple seasoning blend lets the natural beefy flavor shine while giving a tasty crust once seared.
  3. Heat the Pan: Place a heavy-bottom skillet or cast-iron pan over medium-high heat. Add a drizzle of olive oil and allow it to heat until shimmering but not smoking—this is key to achieving a beautiful sear.
  4. Sear the Steak Bites: Add the steak cubes to the hot pan in a single layer without overcrowding. Let them cook undisturbed for 2-3 minutes on one side to develop a golden crust. Flip and cook for another 2 minutes. For butter lovers, add a tablespoon of butter now, spooning the melted butter over the steak bites to enhance flavor.
  5. Rest and Serve: Remove the steak bites from the pan onto a plate and let them rest for a few minutes. Resting locks in the juices for tender bites. Finish by sprinkling chopped fresh parsley for a bright touch, then dig in!

Notes

  • Use room temperature meat to ensure even cooking and better searing without steaming the steak.
  • Don’t overcrowd the pan; work in batches if needed to keep the pan hot and get a crispy crust.
  • High heat is crucial for developing a caramelized exterior quickly.
  • Opt for tender cuts like sirloin, ribeye, or tenderloin for juicy bites.
  • Let the steak bites rest before serving to lock in juices and maximize tenderness.
