Ingredients

Scale

Noodles

  • 8 oz spaghetti, rice noodles, or soba noodles

Spicy Peanut Sauce

  • 1/3 cup creamy peanut butter
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sriracha or chili sauce (adjust to taste)
  • 2 cloves garlic, freshly minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey or brown sugar (use maple syrup or agave for vegan)
  • 1 teaspoon sesame oil
  • Warm water or reserved noodle cooking water, as needed to thin sauce

Vegetables and Garnishes (Optional)

  • Shredded carrots
  • Sliced bell peppers
  • Chopped scallions
  • Crushed peanuts
  • Sesame seeds
  • Chopped fresh cilantro
  • Lime wedges

Instructions

  1. Cook Your Noodles: Boil your selected noodles according to package instructions until just tender, then drain and set aside. Reserve a bit of the noodle water to help loosen the sauce if needed.
  2. Prepare the Spicy Peanut Sauce: In a medium bowl, whisk together creamy peanut butter, soy sauce, freshly minced garlic and ginger, sriracha, lime juice, honey, and a splash of sesame oil until smooth and creamy. If the sauce is too thick, slowly add warm water or reserved noodle cooking water, stirring until you reach your desired creamy consistency.
  3. Combine Noodles and Sauce: Toss the cooked noodles into the spicy peanut sauce until fully coated, making sure every strand is covered for maximum flavor.
  4. Add Fresh Veggies and Garnishes: Mix in any fresh vegetables such as shredded carrots or chopped scallions, or top with crushed peanuts and sesame seeds for extra texture and crunch. Garnish with cilantro and lime wedges if desired.

Notes

  • Use fresh ginger and garlic for best flavor.
  • Add noodle water gradually to avoid making the sauce too runny.
  • Lightly toast peanuts before adding for extra crunch and flavor.
  • Prepare the sauce ahead of time and toss with noodles just before serving to keep it fresh.
  • Taste and adjust spice, sweetness, or acidity before mixing sauce with noodles.
