  • 2 green onions, thinly sliced

Instructions

  1. Prepare the Chicken: Cut the chicken into bite-sized chunks and pat dry thoroughly to ensure the coating sticks well. Set up a dredging station with beaten eggs on one side and the cornstarch or flour on the other, seasoned lightly with salt and pepper if desired.
  2. Coat the Chicken: Dip each chicken piece first into the beaten eggs, then dredge thoroughly in the cornstarch or flour mixture to achieve a light but full coating, which is essential for crispy texture.
  3. Fry the Chicken: Heat enough oil in a pan over medium-high heat. Fry the coated chicken pieces in batches until they are golden brown and crispy, about 4 to 5 minutes per batch. Remove and drain on paper towels to remove excess oil.
