Ingredients

Scale

Main Ingredients

  • 1 lb ground beef (80/20)
  • 1 cup fresh mushrooms, sliced (button or cremini)
  • 1 medium sweet onion, thinly sliced
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1 large egg
  • 2 cups beef broth (or vegetable broth for vegetarian)
  • 2 tsp Worcestershire sauce
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour or cornstarch
  • 2 tbsp butter
  • 1 tbsp oil (vegetable or olive oil)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Patties: In a large bowl, gently combine ground beef, breadcrumbs, egg, minced garlic, Worcestershire sauce, salt, and pepper. Mix just until combined to ensure tender patties. Shape the mixture into evenly sized oval patties for even cooking.
  2. Brown the Patties: Heat a skillet over medium-high heat with oil and butter. Sear patties on each side until they develop a brown crust, about 3-4 minutes per side. Remove from skillet and set aside on a plate.
  3. Sauté the Mushrooms and Onions: In the same skillet, add more butter if needed. Add sliced onions and mushrooms, cooking until soft and golden, releasing their aromas.
  4. Create the Gravy: Sprinkle flour (or cornstarch) over the vegetables and stir for about 1 minute to cook out the raw taste. Slowly whisk in beef broth, scraping up brown bits from the skillet. Bring to a simmer to thicken into a rich gravy.
  5. Finish Cooking Together: Return the browned patties to the skillet, nestling them into the gravy. Cover and simmer gently for 10-15 minutes to allow flavors to meld and patties to become tender and juicy.

Notes

  • Use fresh, quality beef for juicier, more flavorful patties.
  • Do not overmix the meat to avoid tough patties.
  • Let patties rest before cooking to help them hold shape.
  • Brown patties thoroughly to lock in juices and enhance flavor.
  • Simmer gravy gently on low heat to keep patties tender and prevent breaking gravy.
  • Adjust gravy thickness by adding broth if too thick or more flour/cornstarch if too thin.
