  • 2 shallots, minced
  • 1/3 cup chopped sun-dried tomatoes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh basil or parsley, chopped

Instructions

  1. Prep the Salmon: Pat the salmon fillets dry with paper towels and season generously with salt and pepper to help create a flavorful crust when seared.
  2. Sear the Salmon: Heat olive oil and butter in a large skillet over medium-high heat. Add salmon skin-side down and cook for 4-5 minutes until the skin is crispy. Carefully flip and cook the other side for 2-3 minutes. Remove salmon and set aside.
  3. Cook the Aromatics: In the same skillet, add minced garlic and shallots. Cook for 1-2 minutes until softened and fragrant, stirring constantly to avoid burning.
  4. Build the Sauce: Stir in chopped sun-dried tomatoes and cook for 1 minute. Pour in heavy cream and bring to a gentle simmer. Add grated Parmesan cheese and stir until the sauce thickens and becomes creamy.
  5. Combine & Finish: Return the salmon to the skillet and spoon sauce over each fillet. Let flavors meld for 1-2 minutes on low heat. Finish with fresh herbs for a bright, aromatic finish.
