Ingredients

Scale

Shrimp

  • 1 lb fresh shrimp, peeled and deveined

Fruit

  • 1 ripe mango, diced
  • 1 cup fresh pineapple chunks

Vegetables & Herbs

  • 1 red bell pepper, chopped
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped

Dressing

  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey or agave syrup
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Shrimp: Start by boiling or sautéing peeled shrimp until they turn pink and firm, usually about 2-3 minutes per side if sautéing. Set aside to cool.
  2. Cube the Fruit and Veggies: While the shrimp cool, dice the mango and pineapple into bite-sized chunks. Thinly slice the red onion, chop the red bell pepper, and roughly chop the cilantro.
  3. Make the Dressing: In a small bowl, whisk together the fresh lime juice, olive oil, honey or agave, salt, and pepper until well emulsified and balanced between sweet and tangy.
  4. Toss Everything Together: In a large bowl, combine the shrimp, mango, pineapple, red bell pepper, red onion, and cilantro. Pour the dressing over and toss gently to coat all ingredients evenly.
  5. Chill and Serve: Refrigerate the salad for at least 30 minutes to allow the flavors to meld before serving.

Notes

  • Choose ripe mango and pineapple for the best flavor intensity.
  • Do not overcook shrimp to keep them juicy and tender.
  • Adjust lime juice and honey in the dressing to suit your taste preferences.
  • Chill the salad before serving for enhanced flavor.
  • Use fresh herbs like cilantro or mint to elevate the dish’s aroma and freshness.
