Ingredients

Scale

Protein

  • 500g chicken breasts or thighs, cut into bite-sized pieces

Produce

  • 2 ripe mangoes, diced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch piece fresh ginger, minced
  • Fresh cilantro, for garnish
  • Optional: fresh chili, sliced (to taste)

Pantry Items & Spices

  • 200ml coconut milk
  • 2 tablespoons vegetable oil or ghee
  • 1 tablespoon curry powder (mild to medium heat)
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon chili flakes (optional)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the Ingredients: Chop the chicken into bite-sized pieces, dice ripe mangoes, finely chop onions, and mince garlic and ginger to prepare all components for smooth and quick cooking.
  2. Sauté Aromatics: Heat oil or ghee in a pan over medium heat. Add the onions, garlic, and ginger and cook until softened and fragrant, about 5 minutes, developing a rich flavor base.
  3. Add Spices: Stir in curry powder, turmeric, and chili flakes if using. Cook briefly to toast the spices and enhance their aroma before adding the chicken.
  4. Cook the Chicken: Add the chicken pieces to the pan, season with salt and pepper, and sauté until they start turning golden and are almost cooked through.
  5. Incorporate Mango and Coconut Milk: Pour in the coconut milk and add the diced mangoes. Stir gently to combine and let the mixture simmer for 10-15 minutes until the chicken is fully cooked and the sauce thickens slightly.
  6. Final Seasoning and Serve: Taste and adjust seasoning if needed. Garnish with fresh cilantro and serve hot, enjoying the vibrant, flavorful curry.

Notes

  • Use ripe mangoes for the best balance of sweetness and flavor.
  • Don’t rush sautéing the onions and spices; slow cooking develops deeper flavors.
  • Simmer the curry gently to prevent the coconut milk from curdling.
  • Chicken thighs are preferred for juicier, more flavorful results.
  • Add a squeeze of fresh lime juice before serving for a touch of acidity.
