Ingredients

Scale

Main Ingredients

  • 1 cup elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 ½ cups milk
  • 810 egg roll wrappers
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 teaspoon garlic powder
  • Vegetable or canola oil, for frying

Instructions

  1. Cook the Macaroni: Boil elbow macaroni in salted water until al dente. Drain and set aside, ensuring the pasta is firm enough to hold its shape inside the egg rolls without becoming mushy.
  2. Prepare the Cheese Sauce: Melt butter over medium heat in a saucepan. Whisk in flour to create a roux and cook for about one minute without browning. Slowly add milk while whisking continuously until the mixture thickens. Remove from heat and stir in sharp cheddar cheese until melted and smooth. Season with salt, pepper, and garlic powder.
  3. Combine Pasta and Cheese: Mix the cooked macaroni into the cheese sauce until thoroughly coated. Allow the mixture to cool slightly to facilitate easier handling when filling the egg rolls.
  4. Assemble the Egg Rolls: Place an egg roll wrapper on a flat surface with one corner pointing toward you. Spoon about two tablespoons of the mac and cheese mixture near the corner closest to you. Fold the corner over the filling, fold in the sides tightly, then roll up firmly. Seal the edge with a little water to prevent opening during cooking.
  5. Fry to Crispy Perfection: Heat oil in a deep pan to 350°F (175°C). Fry the egg rolls in batches for about 2-3 minutes per side until golden brown and crispy. Remove with a slotted spoon and drain on paper towels to remove excess oil.

Notes

  • Don’t overfill the wrappers to avoid bursting during frying.
  • Keep unused wrappers covered with a damp towel to prevent drying out and cracking.
  • Maintain oil temperature at 350°F for even cooking and non-greasy texture.
  • Let the mac and cheese mixture cool slightly before filling to prevent soggy wrappers.
  • Allow rolled egg rolls to rest for a few minutes before frying to seal properly and improve texture.
