Instructions

  1. Prepare the Chicken: Season the chicken breasts evenly with salt, pepper, and Italian seasoning. Let them rest for a few minutes to allow the flavors to penetrate.
  2. Slice the Zucchini: Wash the zucchinis and cut them into even rounds or half-moons to ensure uniform cooking.
  3. Sear the Chicken: Heat the extra virgin olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side until they develop a golden brown crust and are cooked through. Remove the chicken from the skillet and set aside.
  4. Sauté the Zucchini and Garlic: In the same skillet, add a little more olive oil if needed. Toss in the minced garlic and sliced zucchini. Cook for 4-5 minutes, stirring frequently, until the zucchini is tender but still retains a slight crispness.
  5. Combine and Finish: Return the cooked chicken breasts to the skillet with the zucchini. Simmer together for 2 minutes so the flavors meld. Adjust seasoning with salt, pepper, and optional crushed red pepper flakes to taste.
