Lamb Patties
- 1 lb ground lamb
- 2 tbsp fresh parsley, finely chopped

- 1 tbsp olive oil

- 4 pita breads or burger buns
- 4 slices fresh tomato
- 1/4 cup red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- Arugula or lettuce leaves for garnish
- Prepare the Lamb Mixture: In a large bowl, combine ground lamb with finely chopped parsley, mint, minced garlic, breadcrumbs, lemon juice, olive oil, salt, and pepper. Mix gently but thoroughly to evenly distribute ingredients without overworking the meat.
- Form and Chill Patties: Shape the mixture into 4 to 6-ounce evenly sized patties. Place them on a lined tray and refrigerate for at least 30 minutes to help them hold together during cooking.
