Ingredients

Scale

Potatoes

  • 1.5 pounds baby potatoes (preferably Yukon Gold or new potatoes)

Sauce and Seasoning

  • 34 garlic cloves, minced
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste

Garnish

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Potatoes: Thoroughly wash and dry the baby potatoes. If any are large, halve or quarter them to ensure even cooking and better sauce absorption.
  2. Cook the Potatoes: Heat olive oil in a large skillet over medium heat. Add the baby potatoes and season lightly with salt and black pepper. Cook, stirring occasionally, until golden brown and tender when pierced with a fork, about 15 to 20 minutes.
  3. Sauté the Garlic: Add the butter to the skillet once the potatoes are nearly cooked. When melted, add the minced garlic and sauté gently for 1 to 2 minutes until fragrant, taking care not to burn the garlic to avoid bitterness.
  4. Create the Cream Sauce: Pour in the heavy cream and stir well to combine with the potatoes and garlic. Allow the sauce to simmer gently, thickening and coating the potatoes evenly. Adjust seasoning with additional salt and pepper to taste.
  5. Finish and Garnish: Once the sauce has thickened slightly, remove from heat. Sprinkle freshly chopped parsley over the potatoes for freshness and a pop of color before serving.

Notes

  • Choose baby Yukon Gold or new potatoes for the best texture and natural sweetness.
  • Add garlic towards the end of cooking to keep its flavor bright and avoid bitterness.
  • Simmer the cream sauce gently over low heat to prevent curdling and ensure smoothness.
  • Add fresh herbs at the end to maintain their vibrant flavor and color.
  • Season gradually, tasting as you go to achieve the perfect balance of salt and pepper.
