Ingredients

Scale

Protein

  • 1 lb chicken breast or thighs, boneless

Sauce and Dairy

  • 1/2 cup buffalo sauce (adjust to taste)
  • 4 oz cream cheese, cubed
  • 1/2 cup shredded cheese (cheddar or blue cheese, optional)
  • Ranch or blue cheese dressing, for garnish (optional)

Vegetables

  • 2 stalks celery, finely diced
  • 2 medium carrots, finely diced
  • 2 cloves garlic, minced
  • 1 medium onion, finely diced

Liquids and Seasonings

  • 4 cups chicken broth
  • Salt and pepper, to taste
  • Oil or butter, for sautéing

Instructions

  1. Prepare the Vegetables: Finely dice celery, carrots, garlic, and onion. Sauté them in a large pot with a little oil or butter over medium heat until softened and fragrant, about 5 minutes.
  2. Cook the Chicken: Add boneless chicken breasts or thighs to the pot, seasoning lightly with salt and pepper. Pour in chicken broth and bring to a gentle simmer. Cook until the chicken is done, approximately 15 minutes.
  3. Shred the Chicken: Remove the chicken pieces from the pot and shred them using two forks. Return the shredded chicken to the pot to mix evenly.
  4. Stir in Buffalo Sauce and Cream Cheese: Add the buffalo sauce and cubed cream cheese to the soup. Stir continuously until the cream cheese has fully melted and the soup has a silky, creamy texture.
  5. Adjust Seasonings and Simmer: Taste the soup and add salt, pepper, or more buffalo sauce as desired. Allow it to simmer gently for 5 more minutes to blend the flavors well.

Notes

  • Use rotisserie chicken to save time and add rich flavor.
  • Adjust buffalo sauce gradually to control the heat level.
  • Cream cheese is essential to balance spice and add creaminess.
  • Cook vegetables gently for texture without mushiness.
  • Finish with fresh herbs like parsley or green onions for extra brightness.
  • Garnish with ranch or blue cheese dressing, and fresh chopped green onions or celery leaves.
  • Serve with crusty bread, garlic crackers, or celery sticks for dipping.
  • Soup can be refrigerated up to 3 days or frozen up to 3 months.
  • Reheat gently to maintain creamy texture and avoid curdling.
