Ingredients

Scale

Vegetables

  • 4 cups cauliflower florets (about 1 medium head)

Alfredo Sauce

  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • A pinch of nutmeg

Cheeses

  • 1 cup shredded mozzarella cheese
  • 1/4 cup extra Parmesan cheese for topping

Optional Fresh Herbs

  • Chopped basil or parsley for garnish

Instructions

  1. Prepare the Cauliflower: Wash and cut the cauliflower into bite-sized florets. Steam or boil them until just tender but not mushy, about 5-7 minutes. Drain well to avoid watery bake.
  2. Make the Alfredo Sauce: In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant. Stir in cream and bring to a gentle simmer, then gradually add freshly grated Parmesan cheese, stirring until smooth. Season with salt, pepper, and a pinch of nutmeg.
  3. Combine Cauliflower and Sauce: Place the cooked cauliflower in a mixing bowl and pour the Alfredo sauce over it, stirring gently to coat every piece evenly.
  4. Assemble the Bake: Transfer the cauliflower and sauce mixture to a greased baking dish. Top with shredded mozzarella and extra Parmesan cheese to create a golden crust when baked.
  5. Bake Until Golden and Bubbling: Preheat oven to 375°F (190°C). Bake for 20-25 minutes or until the cheese is melted, golden, and bubbling around the edges.

Notes

  • Drain thoroughly: Make sure cauliflower is well-drained to prevent the bake from becoming watery.
  • Melt cheese slowly: Add cheese gradually to your sauce over low heat for a smooth consistency without clumps.
  • Use fresh Parmesan: Grated fresh cheese offers better flavor and texture than pre-grated varieties.
  • Cover during baking: If the top browns too quickly, cover loosely with foil to avoid burning.
  • Let it rest: Allow the bake to set for 5-10 minutes before serving to help flavors meld and for easier slicing.
