Blackened Cajun Chicken Alfredo

Blackened Cajun Chicken Alfredo is a comforting and bold dish that pairs tender, spiced chicken with a rich, creamy Alfredo sauce. This flavorful recipe delivers a perfect balance of smoky Cajun spices and indulgent creaminess, ideal for quick weeknight dinners or impressing guests with minimal effort.

Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil

Alfredo Sauce

  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper, to taste

Pasta

  • 8 ounces fettuccine or preferred pasta (gluten-free if desired)

Garnish

  • 2 tablespoons fresh parsley, chopped
  • Optional: extra grated Parmesan cheese
  • Optional: lemon juice (a squeeze)

Instructions

  1. Prepare the Chicken: Generously coat both sides of the chicken breasts with Cajun seasoning. Heat olive oil in a skillet over medium-high heat, then sear the chicken for 4-5 minutes per side until blackened and cooked through. Remove from skillet and set aside to rest.
  2. Cook the Pasta: Boil pasta in salted water until al dente. Drain, reserving a small cup of pasta water, and set pasta aside.
  3. Make the Alfredo Sauce: In the same skillet, melt butter over medium heat and sauté minced garlic until fragrant, about 1 minute. Pour in heavy cream and bring to a gentle simmer. Gradually whisk in freshly grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  4. Combine Pasta and Sauce: Add the cooked pasta to the sauce, tossing well to coat every strand evenly. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  5. Slice and Serve: Slice the rested blackened chicken and arrange on top of the creamy pasta. Garnish with chopped fresh parsley and, if desired, extra Parmesan cheese or a squeeze of lemon juice.

Notes

  • Season generously with Cajun spices for an authentic flavorful crust on the chicken.
  • Use freshly grated Parmesan cheese for a smoother, richer sauce.
  • Cook garlic on low heat to avoid burning and bitterness.
  • Let the chicken rest after cooking to keep it juicy and tender.
  • Use reserved pasta water to loosen sauce instead of adding extra cream or milk.
