Ingredients

Scale

Beef Tenderloin

  • 1 center-cut beef tenderloin (about 1 to 1.5 pounds)
  • Salt, to taste
  • Black pepper, to taste

Mushroom Sauce

  • 2 tablespoons butter (more as needed)
  • 1 tablespoon olive oil
  • 4 ounces cremini or button mushrooms, sliced
  • 2 shallots, finely chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth or stock
  • 1/2 cup heavy cream
  • 1 teaspoon fresh thyme or rosemary, chopped
  • Salt and black pepper, to taste

Instructions

  1. Preparing the Beef Tenderloin: Trim any excess fat from the beef tenderloin if needed, then pat the meat dry with paper towels. Season the beef generously with salt and black pepper on all sides to enhance its natural flavor.
  2. Searing the Beef: Heat a heavy skillet over medium-high heat and add a splash of olive oil and a pat of butter. Once hot and shimmering, add the tenderloin and sear it on all sides until it develops a beautiful, golden crust, about 3 to 4 minutes per side. Remove the beef from the pan and set it aside to rest.
  3. Sautéing Mushrooms and Aromatics: Using the same pan, add extra butter if needed, then toss in finely chopped shallots and garlic. Sauté until fragrant and translucent. Add the sliced mushrooms and cook until they release their moisture and turn golden brown, about 5 to 7 minutes.
  4. Making the Mushroom Sauce: Pour in the beef broth and stir, scraping any browned bits from the pan. Let the broth reduce by half, then add the heavy cream and fresh herbs. Simmer gently until the sauce thickens and coats the back of a spoon. Season with salt and pepper to taste.
  5. Bringing It All Together: Return the seared beef tenderloin to the pan with the mushroom sauce to warm through for a few minutes, basting the meat with the sauce to meld flavors and keep the beef juicy and tender.

Notes

  • Let the beef rest after searing to lock in juices and maintain tenderness.
  • Do not overcrowd the pan when sautéing mushrooms to ensure proper browning.
  • Use room temperature beef for even cooking and better sear.
  • Scrape fond (browned bits) off the pan to incorporate intense flavors into the sauce.
  • Keep sauce at a gentle simmer to prevent cream from curdling.
