Ingredients

Scale

Beef

  • 1 lb beef sirloin or tenderloin strips, thinly sliced
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp olive oil

Mushrooms and Aromatics

  • 8 oz fresh cremini or white button mushrooms, sliced
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp butter

Sauce

  • 1 cup beef broth
  • 1 tsp Dijon mustard
  • 1/2 cup sour cream

Garnish

  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the Beef: Slice beef into thin strips against the grain for tenderness. Season with salt and pepper. Heat olive oil in a hot skillet and quickly sear beef strips about 2 minutes per side until browned but not fully cooked. Remove beef from the pan and set aside.
  2. Sauté the Mushrooms and Onions: In the same pan, melt butter over medium heat. Add thinly sliced onions and minced garlic, cooking until softened and fragrant. Add mushrooms and sauté for 5–7 minutes until they release juices and begin to brown.
  3. Build the Sauce: Pour in beef broth and stir in Dijon mustard. Let the mixture simmer and reduce slightly for about 5 minutes to concentrate flavors.
  4. Combine Beef and Sauce: Return the seared beef strips to the pan and gently stir to combine. Lower heat and stir in sour cream until smooth and creamy, avoiding boiling to prevent curdling.
  5. Finish and Garnish: Season the stroganoff with salt and pepper to taste. Sprinkle freshly chopped parsley on top before serving for freshness and color.

Notes

  • Thinly slice beef to ensure quick cooking and tender texture.
  • Add sour cream off heat or on low heat to avoid curdling.
  • Use high-quality beef broth for deeper flavor.
  • Pat mushrooms dry before cooking to get a better sear and prevent sogginess.
  • Rest beef before slicing to keep it juicy and moist.
