Ingredients

Scale

Salmon Bites

  • 1 lb fresh, skinless salmon fillets, cut into bite-sized cubes
  • 1 cup panko breadcrumbs
  • 2 large eggs, whisked (egg wash)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Vegetable oil (for frying)

Bang Bang Sauce

  • 1/3 cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 1 teaspoon sriracha (adjust to taste)
  • 1 teaspoon fresh lemon juice

Garnishes (optional)

  • Chopped green onions
  • Fresh cilantro
  • Sesame seeds

Instructions

  1. Prepare the Salmon: Cut fresh salmon fillets into uniform bite-sized cubes. Season lightly with salt, pepper, and garlic powder to enhance the natural flavor.
  2. Set Up Your Breading Station: Whisk the eggs in a shallow bowl to create an egg wash. Spread panko breadcrumbs evenly in another dish. Dip each salmon piece first into the egg wash, then roll in panko breadcrumbs until fully coated.
  3. Cook the Salmon Bites: Heat vegetable oil in a skillet over medium-high heat. Fry the breaded salmon bites in batches for 2-3 minutes per side, until golden brown and cooked through. Remove and drain on paper towels.
  4. Make the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, and lemon juice. Mix thoroughly until smooth and creamy. Adjust spice level to preference.
  5. Toss and Serve: Gently toss the crispy salmon bites in the bang bang sauce until well coated. Serve immediately, garnished with optional green onions, cilantro, or sesame seeds for extra flavor and presentation.

Notes

  • Use fresh salmon for best flavor and texture; avoid frozen if possible.
  • Do not overcrowd the skillet while frying to maintain crispiness and even cooking.
  • Pat salmon pieces dry before breading to help the coating stick better.
  • If the bang bang sauce is too thick, add a little water or lemon juice to loosen it for easier tossing.
  • Serve the bites immediately to preserve crunch and flavor.
