Instructions

  1. Prepare the Cauliflower: Remove outer leaves and trim stem while keeping the core intact. Slice the cauliflower horizontally into 3/4-inch thick steaks from the center, aiming for two to three thick, sturdy slices that hold shape during cooking.
  2. Season the Steaks: Generously brush both sides of each cauliflower steak with extra virgin olive oil. Evenly sprinkle the zaatar spice blend over both sides, then season with salt and pepper to taste. Optionally, lightly squeeze fresh lemon juice over the steaks to brighten the flavors.
  3. Cook the Steaks: For roasting, preheat oven to 425°F (220°C). Place the steaks on a baking sheet without overcrowding and roast for 20-25 minutes, flipping halfway through, until they are golden brown and tender.
