Ingredients

Scale

Truffle Base

  • 8 oz white chocolate chips or bars
  • 1 cup fresh strawberries, finely chopped
  • 1/3 cup heavy cream
  • 2 tbsp unsalted butter
  • 2 tbsp powdered sugar, plus extra for coating
  • 1 tsp vanilla extract

Optional Coatings & Flavorings

  • Freeze-dried strawberry powder (for coating)
  • Crushed pistachios or almonds (for coating)
  • Melted dark or milk chocolate (for drizzling)
  • Rose water or orange zest (for infused flavor)
  • Strawberry liqueur or Grand Marnier (for alcohol infusion)

Instructions

  1. Prepare the Strawberries: Finely chop fresh strawberries, then gently cook them over low heat with a touch of powdered sugar until they release their juices and soften into a thick jam-like consistency.
  2. Melt the White Chocolate: While the strawberries cool, melt the white chocolate slowly in a heatproof bowl over simmering water or in short bursts in the microwave, stirring frequently to ensure a smooth texture without burning.
  3. Mix the Cream and Butter: Warm heavy cream and unsalted butter together just until melted, then carefully combine them with the melted white chocolate, stirring gently to keep the mixture velvety and homogeneous.
  4. Combine Strawberry Mixture: Fold the cooled strawberry compote into the white chocolate mixture, add vanilla extract, and mix until fully incorporated and beautifully pink.
  5. Chill the Mixture: Cover the bowl and refrigerate for at least 2 hours, or until firm enough to shape by hand without sticking.
  6. Shape and Coat the Truffles: Using a small scoop or spoon, form bite-sized balls and roll them in powdered sugar, freeze-dried strawberry powder, crushed nuts, or melted chocolate according to your preference.

Notes

  • Temper your chocolate carefully to avoid overheating and graininess.
  • Use ripe, juicy strawberries for the best natural flavor.
  • Keep all ingredients and the mixture chilled for easier shaping and better texture.
  • Experiment with different coatings such as cocoa powder, shredded coconut, or edible glitter.
  • Work quickly to prevent white chocolate from seizing or hardening before shaping.
  • If using frozen strawberries, thaw and drain completely to avoid watery filling.
  • Nut-free options include coatings like cocoa powder or coconut flakes.
  • Wet your hands slightly to shape the truffles more neatly without sticking.
