  • 2 tablespoons rice vinegar

Tofu Filling

  • 14 oz firm tofu, drained and crumbled
  • 1/4 cup vegan mayonnaise
  • 2 tablespoons soy sauce or tamari
  • 1 teaspoon sriracha or spicy mayo (optional)

Toppings

  • 1/2 cup cucumber, diced
  • 1/2 cup avocado, diced
  • 1/4 cup green onions, chopped
  • 2 sheets nori, crumbled

Instructions

  1. Prepare the sushi rice: Cook the sushi rice according to package instructions. While the rice is still warm, mix in the rice vinegar thoroughly to infuse the signature tangy sushi flavor and achieve a sticky texture that holds well.
  2. Make the tofu filling: Drain and crumble the firm tofu. In a bowl, combine the tofu with vegan mayo, soy sauce or tamari, and sriracha or spicy mayo if using. Mix until creamy and well blended to create a savory, slightly spicy filling.
  3. Layer the bake: Spread a layer of the seasoned sushi rice evenly in a baking dish. Add the tofu mixture on top, spreading it out. Then evenly distribute diced cucumber, avocado, and chopped green onions over the tofu layer. Finally, sprinkle crumbled nori over the top for authentic flavor and texture contrast.
