Twix Cookies

Twix Cookies

Twix Cookies are a delicious homemade treat combining a crisp shortbread base, a chewy caramel layer, and a smooth semi-sweet chocolate topping. This quick and easy recipe delivers a perfect texture and rich flavor that replicates the beloved classic candy bar, making it ideal for snacks, parties, or sharing with friends and family.

Ingredients

Scale

Cookie Base

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour (or gluten-free all-purpose blend for gluten-free option)
  • 1/2 teaspoon salt (a pinch)
  • 1 teaspoon vanilla extract

Caramel Layer

  • 14 ounces caramel candies (soft caramel pieces), unwrapped

Chocolate Topping

  • 1 cup semi-sweet chocolate chips (or dark chocolate chips for a variation)

Instructions

  1. Prepare and Chill the Cookie Dough: Cream together the softened unsalted butter and granulated sugar until light and fluffy. Add vanilla extract and a pinch of salt, then gradually mix in the all-purpose flour (or gluten-free blend) until a soft dough forms. Press the dough evenly into a parchment-lined 9×13 inch baking pan. Chill in the refrigerator for 30 minutes to firm up the dough, ensuring a perfectly crisp texture.
  2. Bake the Shortbread Base: Preheat the oven to 350°F (175°C). Bake the chilled dough for about 20 minutes or until the edges turn lightly golden. This creates a crisp base to hold the caramel and chocolate layers.
  3. Add the Caramel Layer: Once the shortbread base cools slightly but is still warm, unwrap the caramel candies and spread them evenly over the shortbread. Gently warm the pan in the oven or microwave on low heat if needed, to help the caramel spread into a smooth, chewy layer.
  4. Top with Chocolate: Sprinkle semi-sweet chocolate chips over the warm caramel layer. Let them sit for a few minutes to soften, then use a spatula to spread the melted chocolate evenly over the entire caramel layer, creating a smooth and luscious topping.
  5. Chill and Slice: Place the pan in the refrigerator for at least one hour to allow the chocolate and caramel to fully set. Once firm, slice into bars or squares and enjoy your homemade Twix Cookies.

Notes

  • Use room temperature butter for an even dough texture that bakes uniformly.
  • Don’t overbake the shortbread base; aim for a pale golden color to keep it crisp yet tender.
  • Warm the caramel gently using low heat to avoid burning and ensure smooth spreading.
  • Line your baking pan with parchment paper to make removal and slicing easier.
  • Ensure the cookie bars are fully chilled before slicing for clean, crack-free cuts.
  • For variations, consider swapping half the butter with peanut butter, sprinkling flaky sea salt on caramel, or folding chopped nuts into the dough.
  • Store cookies at room temperature in an airtight container for up to 5 days, or freeze wrapped tightly for up to 3 months.
  • Reheat leftovers in the microwave for 10-15 seconds to soften caramel and chocolate.
