Instructions

  1. Bake the Potatoes: Wash the russet potatoes thoroughly and prick each a few times with a fork. Place them directly on the oven rack and bake at 400°F (200°C) for 50-60 minutes until the skins are crisp and a fork slides in easily.
  2. Scoop Out the Potato Flesh: After the potatoes cool slightly, cut them lengthwise in half. Carefully scoop out the fluffy insides into a bowl, leaving a thin layer attached to the skins to keep them sturdy.
  3. Mix the Filling: Add butter, sour cream, shredded cheese, milk, salt, and pepper to the potato flesh. Mash and mix until creamy and well combined. Stir in chopped green onions and bacon bits if using.
  4. Fill the Potato Skins: Spoon the cheesy mixture back into the potato skins, piling generously but neatly to cover. Sprinkle extra cheese on top for a melty golden crust.
  5. Bake Again: Place the filled potatoes on a baking sheet and bake at 375°F (190°C) for 15-20 minutes until the tops are golden and bubbly. Let cool briefly before serving.
