Instructions

  1. Roast the Sweet Potatoes: Preheat oven to 400°F (200°C). Pierce each sweet potato several times with a fork. Place them on a baking sheet and roast for 45-50 minutes, or until very soft and easily pierced with a knife.

  3. Scoop and Mix: When sweet potatoes are cool enough to handle, slice each lengthwise in half. Scoop out the flesh into a bowl, leaving a thin shell. Mix the sweet potato flesh with the buffalo chicken filling until fully combined.
