Ingredients

Scale

Chicken Wings

  • 2 pounds chicken wings (flats and drumettes separated, optional)

Peanut Sauce

  • 1/2 cup creamy, unsweetened peanut butter
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 1/2 tablespoons honey or brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon fresh lime juice
  • 1/2 to 1 teaspoon chili flakes or 1 teaspoon sriracha (adjust to taste)
  • 1 teaspoon toasted sesame oil

Garnish

  • Fresh cilantro, chopped
  • Scallions, chopped
  • Toasted sesame seeds
  • Lime wedges (optional)

Instructions

  1. Prep the Chicken Wings: Pat chicken wings dry thoroughly with paper towels to remove excess moisture for crispy skin. Optionally, separate flats and drumettes for even cooking and easier eating.
  2. Make the Peanut Sauce: In a mixing bowl, whisk together peanut butter, soy sauce, honey or brown sugar, minced garlic, grated ginger, lime juice, chili flakes or sriracha, and toasted sesame oil. Taste and adjust ingredients to balance sweet, salty, tangy, and spicy flavors.
  3. Coat the Wings and Marinate: Toss wings in half of the prepared peanut sauce, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes to let flavors penetrate and tenderize the meat.
  4. Cook Until Crispy: Choose your cooking method: deep-fry wings at 350°F for 8-10 minutes until golden and crispy; or bake in a preheated oven at 425°F for 35-40 minutes, turning halfway through; or grill over medium-high heat until skin crisps and the wings are cooked through.
  5. Toss in Remaining Sauce and Serve: Once cooked, toss wings in the remaining peanut sauce to coat evenly. Garnish with fresh cilantro, chopped scallions, and toasted sesame seeds. Serve with lime wedges if desired.

Notes

  • Dry wings thoroughly before cooking to achieve best crispiness.
  • Adjust spice level gradually by adding chili flakes or sriracha slowly and tasting along the way.
  • Use natural, unsweetened peanut butter for authentic flavor.
  • Marinating wings enhances flavor and tenderness.
  • Allow wings to rest for a couple of minutes after cooking to lock in juices and maintain crispness.
  • Baking or grilling are great alternatives to deep-frying for a healthier option.
  • Substitute soy sauce with tamari or coconut aminos for a gluten-free version.
  • Make the peanut sauce a day ahead to deepen the flavors, storing it refrigerated.
  • Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
  • Reheat in a hot oven or air fryer at 375°F for 8-10 minutes to restore crispness; avoid microwaving.
