Ingredients

Scale

Main Ingredients

  • 1 cup cooked sweet potatoes (mashed, about 1 medium-large sweet potato)
  • 1/3 cup cocoa powder
  • 1/4 cup nut butter (e.g., almond or peanut butter) or 1/4 cup neutral oil (e.g., coconut or vegetable oil)
  • 1/3 to 1/2 cup sweetener (maple syrup or honey)
  • 3/4 cup flour (all-purpose, whole wheat, almond flour, or gluten-free blend)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Prepare the Sweet Potatoes: Bake or steam sweet potatoes until fork-tender. Allow them to cool completely, then mash thoroughly until smooth and creamy.
  2. Mix the Wet Ingredients: In a large bowl, combine the mashed sweet potatoes with your chosen nut butter or oil, sweetener, and vanilla extract. Stir until the mixture is silky and uniform.
  3. Combine Dry Ingredients: In a separate bowl, sift together cocoa powder, flour, baking powder, and salt to ensure even distribution and a lump-free batter.
  4. Incorporate Dry and Wet Mixtures: Slowly fold the dry ingredients into the wet mixture. Mix gently but thoroughly until a thick, uniform brownie batter forms with no streaks.
  5. Bake Until Set: Spread the batter evenly into a lined or greased baking pan. Bake at 350°F (175°C) for 25-30 minutes, or until a toothpick inserted comes out mostly clean with moist crumbs.

Notes

  • Use fully cooked sweet potatoes for a smooth texture and natural sweetness, avoiding lumps.
  • Don’t overmix the batter to keep the brownies tender and not tough.
  • Check baking time 5 minutes early to prevent drying out; ovens vary.
  • Add a teaspoon of brewed coffee or espresso powder to intensify chocolate flavor.
  • Allow brownies to cool completely before cutting for easier, cleaner slices.
