Instructions

  1. Prepare the Vegetables: Wash all vegetables thoroughly. Core the tomatoes and bell peppers, peel the cucumber if desired, and finely chop the red onion and garlic to ensure smooth blending.
  2. Blend the Base: Place the tomatoes, cucumber, bell peppers, onion, and garlic into a blender or food processor. Blend or pulse to your preferred texture, either smooth or slightly chunky.
  3. Season and Chill: Add the extra virgin olive oil, sherry vinegar, salt, and black pepper to the blended mixture. Stir well, taste and adjust seasoning as needed. Cover and refrigerate for at least 2 hours to allow flavors to meld and chill thoroughly.
  4. Garnish and Serve: Stir the gazpacho again before serving. Pour into bowls or glasses and garnish with fresh herbs, diced vegetables, or your choice of toppings such as a drizzle of olive oil or toasted bread cubes.
