Ingredients

Scale

Protein

  • 1 lb chicken breast or thighs

Vegetables & Herbs

  • 2 ears fresh corn
  • 1/4 cup fresh cilantro, chopped

Grains

  • 2 cups cooked white or brown rice

Dressing & Creamy Elements

  • 3 tablespoons mayonnaise or Mexican crema
  • Juice of 1 lime (about 2 tablespoons)

Cheese

  • 1/4 cup crumbled cotija or feta cheese

Spices

  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare and Marinate the Chicken: Season the chicken with smoked paprika, cumin, garlic powder, chili powder, salt, and black pepper. Let it marinate for at least 15 minutes to allow the flavors to penetrate deeply.
  2. Char the Corn: Grill or pan-sear the fresh corn until nicely browned and slightly smoky. Cut the kernels off the cob and mix them with mayonnaise or Mexican crema, fresh lime juice, and a sprinkle of cotija cheese to create an authentic street corn mixture.
  3. Cook the Chicken: Cook the marinated chicken on a hot grill or skillet until an internal temperature of 165°F (75°C) is reached and the outside has a beautiful seared crust. Allow the chicken to rest briefly before slicing.
  4. Assemble the Bowl: Layer the cooked rice at the bottom of the bowl. Top with sliced chicken, the charred corn mixture, and garnish with chopped cilantro and additional cotija cheese.
  5. Finish with Fresh Lime: Drizzle fresh lime juice over the assembled bowl right before serving to brighten and enhance all the flavors.

Notes

  • Use fresh corn for sweeter, juicier kernels essential for authentic street corn flavor.
  • Marinate the chicken to amplify depth of flavor.
  • Char the corn and chicken over high heat but watch carefully to avoid burning.
  • Add creamy sauce to the corn only after charring to retain freshness and balance.
  • Let cooked chicken rest to ensure juicy, tender slices.
