Ingredients

Scale

Fruit Layer

  • 4 cups fresh strawberries, washed and sliced
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract

Cream Cheese Layer

  • 8 oz cream cheese, softened
  • 1 teaspoon vanilla extract (optional, for added depth)
  • 1 teaspoon lemon zest (optional, for variation)

Topping

  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup (1 stick) unsalted butter, melted
  • Optional: chopped pecans or almonds for topping

Instructions

  1. Prepare the Strawberry Layer: Wash and slice the fresh strawberries. In a bowl, gently toss the strawberries with sugar and vanilla extract to macerate and release their juices. Spread this mixture evenly in the bottom of a greased 9×13 inch baking dish.
  2. Add the Cream Cheese Layer: Soften the cream cheese to room temperature. Spread or dollop it evenly over the strawberry layer, smoothing gently to create a creamy cheesecake layer.
  3. Top with Cake Mix and Butter: Evenly sprinkle the dry yellow cake mix over the cream cheese layer. Drizzle the melted butter evenly over the cake mix, ensuring full coverage to create a crispy golden crust when baked. Optionally, sprinkle chopped nuts on top for extra texture.
  4. Bake Until Golden and Bubbly: Preheat the oven to 350°F (175°C). Bake the assembled cake for 45 to 50 minutes, or until the top is golden brown and the filling is bubbly along the edges. Remove from oven and allow to cool for at least 20 minutes before serving to let the layers set.

Notes

  • Use room temperature cream cheese for easier spreading and a smooth layer.
  • Gently toss strawberries to keep their shape and avoid mushiness.
  • Drizzle melted butter in small amounts over the cake mix to ensure crispiness.
  • Let the cake rest at least 20 minutes after baking to enhance texture and flavor.
  • Serve warm or at room temperature, both are delicious.
  • Frozen strawberries can be used if thawed and drained well to avoid excess moisture.
  • Dairy-free and vegan substitutions are possible with alternative ingredients.
