Ingredients

Scale

Protein

  • 1 lb chicken thighs (juicy and tender, skin-on recommended)

Sauce

  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tbsp honey or brown sugar
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated

Noodles

  • 8 oz rice noodles or egg noodles
  • 1 tsp sesame oil (for tossing noodles)

Vegetables & Garnishes

  • 2 green onions, sliced
  • 1 tbsp toasted sesame seeds
  • Optional: Bell peppers, snap peas, or bok choy (about 1 cup total, chopped)

Instructions

  1. Prepare the Noodles: Cook your choice of noodles according to package instructions, then drain and toss with a teaspoon of sesame oil to prevent sticking. Set aside.
  2. Make the Sauce: In a small bowl, whisk together soy sauce, honey or brown sugar, sesame oil, minced garlic, and grated ginger until well combined to create the sticky glaze.
  3. Cook the Chicken: Heat a skillet over medium-high heat and add a small amount of oil. Place the chicken thighs skin-side down (if using skin-on) and cook until golden brown and cooked through, about 5-7 minutes per side depending on thickness.
  4. Glaze the Chicken: Pour the prepared sauce over the chicken in the skillet. Reduce heat to medium and cook, turning the chicken pieces frequently, until the sauce thickens and beautifully coats the chicken, making it sticky and flavorful.
  5. Combine and Toss: Add the cooked noodles and any optional vegetables to the skillet. Gently toss everything together to coat in the sauce and heat through for 2-3 minutes.
  6. Garnish and Serve: Transfer the noodle bowl to serving dishes and sprinkle with sliced green onions and toasted sesame seeds. Optionally, add a squeeze of lime for brightness.

Notes

  • Use skin-on chicken thighs for extra flavor and moisture.
  • Slightly undercook noodles as they soften further when mixed with the hot sauce.
  • Toast sesame seeds before sprinkling to enhance their nuttiness and aroma.
  • Let the sauce simmer long enough to thicken and fully coat the chicken.
  • Prep garlic, ginger, and vegetables ahead of time for smooth cooking.
  • Swap chicken with tofu or tempeh for a vegetarian version.
  • Add red pepper flakes or sriracha for a spicy variation.
  • Substitute noodles with spiralized zucchini or shirataki noodles for a low-carb option.
  • Toss in toasted peanuts or cashews to add crunch.
  • Use shrimp or thinly sliced beef as alternative proteins.
