Ingredients

Scale

Main Ingredients

  • 2 pounds beef chuck, cut into bite-sized cubes
  • 3 medium carrots, peeled and diced
  • 2 medium onions, peeled and diced
  • 2 celery stalks, diced
  • 4 cloves garlic, finely minced
  • 3 medium potatoes, peeled and diced
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 2 bay leaves
  • 1 teaspoon salt, adjust to taste
  • 1/2 teaspoon black pepper, adjust to taste

Instructions

  1. Prepare Your Ingredients: Chop your beef into bite-sized cubes, peel and dice the carrots, onions, and potatoes, and finely mince the garlic to get everything ready for a seamless cooking process.
  2. Brown the Beef: In a large pot, heat a little oil and brown the beef cubes on all sides. This step locks in flavor and gives the stew its rich depth, so don’t rush it.
  3. Sauté the Aromatics: Remove the beef, then cook onions, garlic, and celery in the same pot until they soften and start to caramelize, releasing a sweet, savory aroma.
  4. Build the Stew Base: Add tomato paste to the aromatics and cook for a minute or two, then return the beef to the pot. Pour in beef broth, add bay leaves, and season with salt and pepper.
  5. Simmer to Perfection: Add carrots and potatoes, cover the pot, and let everything simmer gently for 1.5 to 2 hours until the beef is fork-tender and the broth is thick and flavorful.
  6. Final Seasoning and Serve: Remove bay leaves, taste and adjust seasonings, then stir well. Your stew is ready to be enjoyed warm and comforting!

Notes

  • Brown your meat properly: Don’t overcrowd the pan to get a nice caramelized crust.
  • Low and slow cooking results in tender meat and richer broth.
  • Season ingredients at multiple stages to layer flavors beautifully.
  • Add potatoes and carrots later to avoid mushy textures.
  • Use quality broth, homemade or good store-bought for best flavor.
