Ingredients

Scale

Proteins & Main Ingredients

  • 1 lb chicken breast, lean and tender
  • 1 tbsp southwest seasoning blend (chili powder, cumin, paprika, garlic)
  • 4 large flour tortillas, soft and pliable
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels, cooked or canned

Vegetables & Fresh Ingredients

  • 1 cup shredded lettuce, crisp and fresh
  • 2 Roma tomatoes, diced
  • 1 avocado or 1/2 cup guacamole
  • Fresh cilantro, a handful for garnish

Dairy

  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1/4 cup sour cream or Greek yogurt

Optional Add-ons and Garnishes

  • Sliced jalapeños or hot sauce (for spicy boost)
  • Lime wedges (for serving)

Instructions

  1. Prepare the Chicken: Season chicken breasts generously with the southwest seasoning blend. Heat a skillet over medium-high heat with a little oil, then cook the chicken for about 5-7 minutes per side until browned and cooked through. Remove from heat and let rest before slicing into thin strips.
  2. Warm Your Tortillas: Gently warm the flour tortillas in a dry pan or microwave for a few seconds until flexible and easy to fold without cracking.
  3. Layer the Fillings: Lay a tortilla flat, spread a spoonful of sour cream or Greek yogurt as the base. Add a layer of sliced chicken, then black beans, corn kernels, shredded lettuce, diced Roma tomatoes, shredded cheese, and a scoop of avocado or guacamole.
  4. Roll Up the Wrap: Fold in the sides of the tortilla, then roll it tightly from the bottom up to securely encase all the fillings inside.
  5. Optional Grilling: For a warm, slightly crispy finish, place the wrap on a grill pan or sandwich press for 1-2 minutes per side until grill marks appear and cheese melts.

Notes

  • Marinate the chicken in lime juice and southwest seasoning for 30 minutes for enhanced flavor.
  • Don’t overfill the wrap to prevent it from falling apart or being difficult to eat.
  • Use fresh, crunchy veggies to ensure great texture and taste.
  • Warm tortillas before assembling to make rolling easier and avoid cracking.
  • Customize the spice level by adjusting seasoning and adding or omitting jalapeños or hot sauce.
