Ingredients

Scale

Chicken

  • 1 lb boneless, skinless chicken breasts or thighs, sliced into thin strips or bite-sized chunks
  • Salt and pepper, to taste
  • 1 tablespoon olive oil or vegetable oil, for searing

Vegetables & Aromatics

  • 45 small baby bok choy, rinsed and chopped into bite-size pieces
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated

Sauces & Seasonings

  • 2 tablespoons soy sauce (or tamari/coconut aminos for gluten-free option)
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Prepare Your Ingredients: Rinse the bok choy thoroughly and chop into bite-sized pieces. Slice the chicken into thin strips or bite-sized chunks. Mince the garlic and grate the fresh ginger to have them ready for cooking.
  2. Heat the Skillet and Sear the Chicken: Warm 1 tablespoon of olive or vegetable oil in a large skillet over medium-high heat. Add the chicken in a single layer, season lightly with salt and pepper, and sear without moving until golden brown on one side, about 3-4 minutes. Flip and cook for another 2-3 minutes until nearly done.
  3. Add Aromatics and Bok Choy: Push the chicken to one side of the skillet and add minced garlic and grated ginger. Stir for about 30 seconds until fragrant. Then add the chopped bok choy and toss everything together to combine and start softening the greens.
  4. Combine Sauces and Finish Cooking: Pour in the soy sauce and drizzle the sesame oil over the ingredients. Sprinkle red pepper flakes if using. Reduce heat to medium and cook for 3-5 minutes until bok choy is tender but still crisp. Taste and adjust seasoning as needed.
  5. Serve Warm and Enjoy: Remove from heat once cooked through and well combined. Serve directly from the skillet or over steamed rice or noodles for a complete meal.

Notes

  • Pat the chicken dry before cooking to achieve better searing and caramelization.
  • Avoid overcrowding the pan; cook in batches if necessary to prevent steaming.
  • Choose fresh bok choy with firm stalks and crisp leaves for best texture.
  • Use high heat when searing to lock in juices and flavor.
  • Taste and adjust soy sauce at the end to prevent overly salty results.
