Ingredients

Scale

Beef and Sauce

  • 3 to 4 lbs beef chuck roast
  • 2 to 3 chipotle peppers in adobo sauce
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • Juice of 1 lime
  • Salt and black pepper, to taste

Tacos and Garnishes

  • Warm corn tortillas
  • Fresh cilantro, chopped
  • Optional: lime wedges
  • Optional toppings: crumbled queso fresco, sour cream, sliced avocado, pickled onions, radishes

Instructions

  1. Prepare the Beef: Season the beef chuck roast generously with salt and black pepper. Heat a skillet over medium-high heat and sear the roast on all sides until browned, locking in juices and creating rich flavor.
  2. Create the Chipotle Sauce: In a blender, combine chipotle peppers in adobo, chopped onion, minced garlic, beef broth, and lime juice. Blend until smooth to form a smoky, spicy sauce.
  3. Slow Cook the Beef: Place the seared beef roast in a slow cooker or heavy pot. Pour the chipotle sauce evenly over the meat. Cover and cook on low for 6 to 8 hours until the beef is tender and easily shredded.
  4. Shred and Toss: Remove the beef from the cooker and shred using two forks. Return the shredded beef to the cooker or pot and mix with remaining sauce to soak up all flavors.
  5. Assemble the Tacos: Warm the corn tortillas in a dry skillet or wrapped in foil. Place a generous amount of shredded beef on each tortilla, top with fresh cilantro and a squeeze of lime. Add any optional toppings and serve immediately.

Notes

  • Searing the beef before slow cooking adds rich caramelized flavor.
  • Cooking the beef in chipotle sauce ensures every bite is juicy and flavorful.
  • Slow cooking low and slow yields melt-in-your-mouth tenderness.
  • Warm tortillas properly on a dry skillet or wrapped in foil to keep them soft and pliable.
  • Adjust the chipotle peppers for your preferred spice level, starting with fewer if sensitive.
