Instructions

  1. Prepare and season the steak: Trim any excess fat from the skirt or flank steak. In a small bowl, mix cumin, chili powder, garlic powder, salt, and pepper. Rub the seasoning evenly over the steak. Let it rest for about 10 minutes while preparing other ingredients.
  2. Cook the steak: Heat a skillet over medium-high heat with 1 tablespoon of oil. Sear the steak for 3-4 minutes on each side until it reaches your preferred doneness. Remove from heat and let it rest for 5 minutes before slicing thinly against the grain.
  3. Assemble the nachos on a sheet pan: Spread a generous layer of sturdy tortilla chips evenly over a rimmed sheet pan. Scatter the black beans evenly over the chips. Arrange the sliced steak on top of the beans and chips. Sprinkle the shredded cheddar and Monterey Jack cheese blend evenly over everything to ensure coverage.
  4. Bake until cheesy and bubbly: Place the sheet pan in a preheated oven at 400°F (200°C) and bake for 7–10 minutes until the cheese melts, bubbles, and ingredients are heated through perfectly.
  5. Top with fresh ingredients: Remove the nachos from the oven. Sprinkle diced tomatoes, sliced jalapeños, and green onions over the hot cheese layer. Add dollops of guacamole and sour cream just before serving for creaminess and flavor contrast.
