Ingredients

Scale

Main Ingredients

  • 2 cups White Chocolate Chips
  • 1 (14 oz) can Sweetened Condensed Milk
  • 1/4 cup Unsalted Butter
  • 1 tsp Mint Extract
  • Green Food Coloring, a few drops (adjust to desired color)

Optional Add-ins

  • 1/2 cup Chopped Nuts (pecans or walnuts recommended)
  • Green and gold sprinkles (for topping)

Instructions

  1. Prepare Your Pan: Line an 8×8-inch square baking pan with parchment paper or aluminum foil, leaving extra on the sides to easily lift the fudge out later. Set aside while making the fudge.
  2. Melt Butter and Condensed Milk: In a medium saucepan over low heat, melt the unsalted butter together with the sweetened condensed milk, stirring constantly to prevent the mixture from burning and to create a smooth, creamy base.
  3. Add White Chocolate Chips: Once the butter and condensed milk are warm and fully combined, add the white chocolate chips. Stir gently until the chips melt completely, resulting in a smooth and glossy mixture.
  4. Incorporate Flavor and Color: Remove the pan from heat. Stir in the mint extract carefully, adding gradually to your taste preference. Add a few drops of green food coloring and mix until the color is uniform and vibrant.
  5. Add Optional Nuts: If using chopped nuts, fold them into the fudge mixture now to introduce a crunchy texture and extra flavor contrast.
  6. Pour and Chill: Pour the fudge mixture evenly into the prepared pan, smoothing the top with a spatula. Refrigerate for at least 2 hours or until the fudge is completely firm.
  7. Cut and Serve: Once set, lift the fudge out using the parchment or foil overhang. Use a sharp, warm knife to cut into small squares. Serve and enjoy your creamy Shamrock Fudge!

Notes

  • Melt ingredients over low heat to avoid scorching and ensure smooth fudge.
  • Use high-quality white chocolate chips for richer flavor and creamier texture.
  • Add mint extract slowly, tasting as you go, since it is very potent.
  • Chill fudge fully before slicing for clean, neat cuts.
  • Chop nuts at room temperature for even texture without bruising.
  • For clean cuts, warm the knife with hot water and dry it before slicing fudge squares.
  • Store fudge in an airtight container at room temperature for up to one week, or refrigerate to extend freshness.
  • Freeze fudge pieces wrapped in plastic wrap in a freezer-safe bag for up to 3 months; thaw at room temperature before serving.
  • Fudge is best served cold or at room temperature; if desired, warm briefly (10-15 seconds) in the microwave but avoid overheating.
