Instructions

  1. Prepare and Roast the Vegetables: Preheat oven to 425°F (220°C). Cut tomatoes into halves or quarters, separate garlic cloves from the bulb keeping their skins on, and roughly chop the onion. Toss tomatoes, garlic, and onion with olive oil, salt, and pepper on a baking sheet. Roast for 30-35 minutes until edges are caramelized and vegetables are tender and aromatic.
  2. Blend the Roasted Ingredients: Allow roasted vegetables to cool slightly. Squeeze the softened garlic cloves from their skins. Transfer roasted tomatoes, peeled garlic, and onion into a blender or food processor, add a splash of broth, and blend until smooth or desired texture is achieved.
  3. Simmer the Soup: Pour blended mixture into a pot, add remaining broth, and bring to a gentle simmer over medium heat. Cook for 10-15 minutes to meld flavors, stirring occasionally.
  4. Add Fresh Herbs and Cream: Stir in chopped fresh basil or other herbs. If desired, add cream or dairy-free alternative. Adjust seasoning with salt and pepper. Remove from heat once soup is hot and silky smooth.
