Ingredients

Scale

Chicken

  • 4 chicken thighs or breasts (bone-in or boneless, skin-on preferred)

Fresh Produce

  • 34 ripe but firm fresh peaches, halved or thickly sliced (skin on)
  • 3 garlic cloves, minced
  • 2 tablespoons fresh rosemary or thyme, chopped
  • 1 lemon, juiced (about 12 tablespoons)

Pantry Items

  • 3 tablespoons olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: 1 tablespoon honey or brown sugar (for extra caramelization)

Instructions

  1. Prepare the Chicken and Peaches: Pat the chicken dry with a paper towel to ensure crisp skin during roasting. Cut the peaches into halves or thick slices, keeping the skin on for added texture and nutrients. Set aside.
  2. Marinate with Herbs and Seasonings: In a large bowl, toss the chicken and peaches with olive oil, minced garlic, chopped rosemary or thyme, salt, and freshly ground pepper. Drizzle with lemon juice. Let it marinate for at least 15 minutes to allow the flavors to meld.
  3. Arrange on a Baking Sheet or Roasting Pan: Place the chicken pieces skin-side up on a baking sheet or roasting pan. Spread the peaches evenly around the chicken, ensuring the pieces are not overcrowded so air can circulate and promote even roasting.
  4. Roast in the Oven: Preheat the oven to 425°F (220°C). Roast the chicken and peaches for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the peaches are soft and caramelized.
  5. Rest and Serve: Remove the chicken and peaches from the oven and let rest for 5 minutes to lock in juices and allow flavors to settle. Garnish with fresh herbs or a drizzle of balsamic glaze, and serve alongside your preferred side dishes.

Notes

  • Use room temperature chicken by taking it out of the fridge 20 minutes prior to cooking for even roasting.
  • Dry the chicken skin thoroughly to achieve a crispy, golden crust.
  • Choose ripe but firm peaches to avoid overly mushy fruit after roasting.
  • Let the chicken rest after cooking to redistribute juices and improve tenderness.
  • Use a meat thermometer to ensure the chicken is cooked safely to 165°F (75°C).
  • Add honey or brown sugar sparingly, only if peaches aren’t sweet enough to maintain the savory-sweet balance.
