Instructions

  1. Prepare the Batter: Combine rice flour, tapioca starch, and water in a bowl until smooth with no lumps. The batter should be thin, similar to heavy cream, to create silky noodle sheets.
  2. Set Up Your Steaming Station: Use a flat, heatproof tray or shallow pan that fits inside your steamer or wok. Lightly oil the surface to prevent sticking. Bring the steamer water to a rolling boil for even cooking.
  3. Pour and Steam the Noodle Sheet: Pour a thin layer of batter onto the tray, just enough to cover the surface evenly. Place the tray inside the steamer and steam for about 2 minutes, until the noodle sheet becomes translucent and slightly firm.
  4. Add Fillings and Roll: Carefully slide the cooked noodle sheet onto a clean surface. Place your chosen filling along one edge, then gently roll it up like a delicate crepe. Repeat with remaining batter and fillings.
