Ingredients

Scale

Cheesecake Layer

  • 8 oz (225g) cream cheese, softened
  • 1/3 cup (67g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

Red Velvet Brownie Batter

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp red food coloring
  • 1 cup (125g) all-purpose flour (or gluten-free flour blend)
  • 3 tbsp unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3 tbsp buttermilk

Instructions

  1. Prepare the Cheesecake Layer: Beat softened cream cheese with sugar, one egg, and vanilla extract until smooth and creamy. Set aside to create the cheesecake swirl.
  2. Mix the Red Velvet Brownie Batter: In a separate bowl, whisk melted butter with sugar until combined. Add eggs, vanilla extract, and red food coloring, mixing well to achieve a vibrant red hue. Sift in flour, cocoa powder, baking powder, and salt. Stir until a thick, fudgy batter forms.
  3. Layer and Swirl: Pour half of the red velvet batter into a greased baking pan, spreading evenly. Spoon dollops of cheesecake mixture over the batter, then spread the remaining red velvet batter on top. Use a knife or skewer to gently swirl the layers together, creating marbled patterns without overmixing.
  4. Bake to Perfection: Bake in a preheated oven at 325°F (160°C) for 35 to 40 minutes, or until edges are set and a toothpick inserted in the center comes out mostly clean with a few moist crumbs. Avoid overbaking to keep the fudgy texture.
  5. Cool and Slice: Let the brownies cool completely in the pan so layers set properly. Cut into squares with a sharp knife, wiping the blade between cuts for clean edges.

Notes

  • Use room temperature cream cheese and eggs for smooth blending.
  • Swirl gently to maintain distinct cheesecake and brownie layers.
  • Choose a high-quality cocoa powder for richer red velvet flavor.
  • Line the pan with parchment paper for easy removal and cleanup.
  • Start testing doneness 5 minutes before recommended bake time to prevent overbaking.
