Instructions

  1. Prepare the Dough: Cream together the unsalted butter and granulated sugar until the mixture is light and fluffy. Add the egg yolk and vanilla extract, mixing well to combine. In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt. Gradually add the dry ingredients into the wet mixture, stirring until you have a smooth, slightly sticky but manageable dough.
  2. Shape the Cookies: Divide the dough into small balls, about one tablespoon each. Place them on a parchment-lined baking tray and gently flatten each ball into a disc. Use your thumb or the back of a spoon to create a small indentation in the center of each cookie to hold the raspberry jam.
  3. Add Raspberry Jam and Almonds: Spoon a small teaspoon of raspberry jam into each indentation, being careful not to overfill and cause overflow. Sprinkle sliced almonds generously around and slightly over the jam to create a crunchy, nutty topping.
  4. Bake to Perfection: Preheat the oven to 350°F (175°C). Bake the cookies for 12-15 minutes, until the edges are golden brown and the almonds are toasted.
