Quick Honey Garlic Chicken Meal Prep is a speedy, flavorful, and comforting dish perfect for busy weeknights or prepping lunches ahead. This recipe combines sweet honey, savory garlic, and tender chicken with a sticky glaze that pairs well with rice, veggies, or salads. Minimal ingredients and easy preparation make it ideal for those with limited time seeking a balanced and satisfying meal.

Ingredients

Scale

Protein

  • 1 lb boneless chicken breasts or thighs

Sauce

  • 3 tablespoons honey
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 3 garlic cloves, minced
  • 1 tablespoon rice vinegar or apple cider vinegar

Cooking

  • 12 tablespoons olive oil or sesame oil
  • Salt and pepper, to taste
  • Red pepper flakes (optional, to taste)

Garnish

  • 2 green onions, freshly chopped
  • Sesame seeds (optional)

Instructions

  1. Prepare the sauce: In a small bowl, whisk together honey, soy sauce, minced garlic, and vinegar until well combined to create the flavorful base of the dish.
  2. Cook the chicken: Heat oil in a large skillet over medium-high heat. Lightly season the chicken with salt and pepper. Place chicken in the pan and cook each side for about 5-6 minutes until golden brown and cooked through. Remove from skillet and set aside.
  3. Sauté the garlic: Reduce heat to medium. Add a little more oil if needed. Sauté extra minced garlic in the skillet until fragrant to build a rich garlic base for the sauce.
  4. Add the sauce and glaze the chicken: Pour the honey garlic sauce mixture into the skillet and simmer for 2-3 minutes until slightly thickened. Return the chicken to the pan and spoon the sauce over the chicken to glaze evenly.
  5. Garnish and portion: Once the chicken is fully coated and sticky, turn off the heat. Sprinkle freshly chopped green onions and optional sesame seeds on top. Divide the chicken and sauce into meal prep containers along with your choice of sides.

Notes

  • Pat chicken dry before cooking for better browning and crust formation.
  • Don’t overcrowd the pan; cook chicken in batches if necessary to maintain a crisp sear.
  • Use fresh garlic for the most vibrant flavor instead of pre-minced garlic from jars.
  • Adjust sweetness and saltiness by tasting the sauce before glazing and tweaking honey or soy sauce amounts as desired.
  • Let the chicken rest a few minutes after cooking to lock in juices and improve texture.
