Ingredients

Scale

Cookie Dough

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract

Filling

  • ½ cup fruit jam or preserves (strawberry, raspberry, apricot, or preferred flavor)

Glaze

  • 1 cup powdered sugar
  • 23 tablespoons milk or cream
  • ½ teaspoon vanilla extract (optional)

Optional Toppings

  • Sprinkles

Instructions

  1. Prepare the dough: In a large bowl, mix the softened unsalted butter and granulated sugar until fluffy and combined. Add the egg yolk and vanilla extract, then slowly incorporate the all-purpose flour until the dough comes together. Chill the dough in the refrigerator for at least 30 minutes to make it easier to handle.
  2. Roll and cut the dough: Sprinkle a clean surface with flour, then roll out the chilled dough to about 1/4-inch thickness. Using a rectangular cookie cutter, cut out even shapes for the cookie base and the top. Remember, you’ll need twice as many cookie pieces for the tops and bottoms.
  3. Add the filling: Place half of the cut dough rectangles on a lined baking sheet. Spoon a small dollop of your chosen jam or preserve onto the center of each piece, leaving a small border all around to prevent leaking during baking.
  4. Sandwich and seal: Place the remaining dough rectangles on top of the jam-topped pieces. Press the edges gently with a fork or your fingers to seal the filling inside. Use a fork to prick a few holes on the surface of the top cookie to allow steam to escape.
  5. Bake the cookies: Preheat your oven to 350°F (175°C). Bake the assembled cookies for 12-15 minutes or until the edges are golden brown. Remove from the oven and allow to cool completely on a wire rack before glazing.
  6. Glaze and decorate: Mix powdered sugar with a little milk or cream and vanilla extract until smooth and pourable. Drizzle this glaze over the cooled Pop-Tart Cookies and top with sprinkles if desired. Let the glaze set before serving.

Notes

  • Chill the dough well to prevent spreading and maintain cookie shape during baking.
  • Use room temperature butter for a tender yet crisp texture.
  • Seal the edges firmly to prevent jam leakage.
  • Do not overfill with jam to avoid messy cookies.
  • Cool cookies completely before glazing to preserve drizzle appearance.
