Cookie Dough
- 2 ½ cups all-purpose flour
- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
Filling
- ½ cup fruit jam or preserves (strawberry, raspberry, apricot, or preferred flavor)
Glaze
- 1 cup powdered sugar
- 2–3 tablespoons milk or cream
- ½ teaspoon vanilla extract (optional)
Optional Toppings
- Prepare the dough: In a large bowl, mix the softened unsalted butter and granulated sugar until fluffy and combined. Add the egg yolk and vanilla extract, then slowly incorporate the all-purpose flour until the dough comes together. Chill the dough in the refrigerator for at least 30 minutes to make it easier to handle.
- Roll and cut the dough: Sprinkle a clean surface with flour, then roll out the chilled dough to about 1/4-inch thickness. Using a rectangular cookie cutter, cut out even shapes for the cookie base and the top. Remember, you’ll need twice as many cookie pieces for the tops and bottoms.
- Add the filling: Place half of the cut dough rectangles on a lined baking sheet. Spoon a small dollop of your chosen jam or preserve onto the center of each piece, leaving a small border all around to prevent leaking during baking.
- Sandwich and seal: Place the remaining dough rectangles on top of the jam-topped pieces. Press the edges gently with a fork or your fingers to seal the filling inside. Use a fork to prick a few holes on the surface of the top cookie to allow steam to escape.
- Bake the cookies: Preheat your oven to 350°F (175°C). Bake the assembled cookies for 12-15 minutes or until the edges are golden brown. Remove from the oven and allow to cool completely on a wire rack before glazing.
- Glaze and decorate: Mix powdered sugar with a little milk or cream and vanilla extract until smooth and pourable. Drizzle this glaze over the cooled Pop-Tart Cookies and top with sprinkles if desired. Let the glaze set before serving.
