Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C). Grease or line a standard muffin tin to prevent sticking and ensure easy removal of the muffins.
  2. Mix the Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, dried oregano, dried basil, salt, and black pepper until evenly combined.
  3. Add Wet Ingredients: Pour in the milk and olive oil. Stir gently until the batter is just combined—thick but scoopable. Avoid overmixing to keep the muffins tender and light.
  4. Incorporate Cheese and Pepperoni: Fold the shredded mozzarella and chopped pepperoni carefully into the batter, distributing them evenly throughout.
  5. Fill Muffin Tin and Add Sauce: Spoon the batter into each muffin cup about ¾ full. Top each muffin with a small dollop of tomato sauce, then gently swirl it with a toothpick or the back of a spoon.
  6. Bake and Cool: Bake the muffins for 18-20 minutes, or until golden brown and a toothpick inserted into the center comes out clean. Allow them to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
