Instructions

  1. Prepare the Steak: Freeze the ribeye steak for about 30 minutes to firm it up, making it easier to slice thinly. Once partially frozen, use a sharp knife to slice the steak as thin as possible against the grain to ensure tenderness.
  2. Sauté the Onions: Heat a skillet over medium heat and add butter or oil. Add the sliced onions and cook for 8-10 minutes until soft and caramelized. Remove the onions from the skillet and set aside.
  3. Cook the Beef: In the same skillet, add a bit more butter or oil if needed. Increase the heat to high and quickly cook the thinly sliced ribeye, stirring frequently to cook evenly. Season with salt and pepper. Cook just until browned to keep the steak juicy.
  4. Melt the Cheese: Return the sautéed onions to the skillet with the steak. Layer the provolone slices on top or evenly drizzle Cheez Whiz over the mixture. Allow the cheese to melt over the hot beef and onions.
  5. Assemble the Sandwich: Slice the hoagie rolls lengthwise, without cutting all the way through. Scoop the cheesy steak and onion filling into each roll, pressing lightly to meld the flavors. Serve immediately.
