Ingredients

Scale

Meat and Aromatics

  • 1 pound ground beef or Italian sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced

Tomato Base and Broth

  • 1 (14 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 4 cups chicken or beef broth

Pasta

  • 6 to 8 lasagna noodles, broken into bite-sized pieces

Cheeses

  • 1 cup ricotta cheese
  • 1 ½ cups shredded mozzarella cheese

Herbs and Vegetables

  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • Optional: 1 cup fresh spinach or mushrooms, chopped

Optional Seasonings

  • Salt and pepper, to taste
  • Red pepper flakes or diced jalapenos (for a spicy kick)

Instructions

  1. Sauté the Aromatics and Meat: Heat a large pot over medium heat. Add chopped onion and minced garlic, cooking until fragrant and translucent. Add ground meat, breaking it into small chunks, and cook until browned completely. Drain excess fat.
  2. Build the Soup Base: Stir in diced tomatoes, tomato sauce, and broth. Add dried basil, oregano, and parsley. Mix well to combine and bring to a gentle simmer.
  3. Add Noodles and Simmer: Break lasagna noodles into bite-sized pieces and add to the pot. If using optional veggies like spinach or mushrooms, add them now. Simmer for 10 to 15 minutes, stirring occasionally until noodles are cooked al dente.
  4. Finish with Cheeses: Reduce heat to low. Stir in dollops of ricotta cheese to add creaminess. Sprinkle shredded mozzarella cheese on top and cover the pot for a few minutes to melt the cheese.
  5. Serve and Enjoy: Ladle the hot soup into bowls. Garnish with fresh basil, grated Parmesan, or red pepper flakes as desired. Serve immediately for best flavor and texture.

Notes

  • Use fresh herbs like basil and parsley when possible for brighter flavor.
  • Do not overcook the noodles to avoid sogginess.
  • Balance the cheese by stirring ricotta into the soup and sprinkling mozzarella on top.
  • Properly brown the meat to enhance depth of flavor and color.
  • Adjust salt, pepper, and herbs at the end to taste.
