Ingredients

Scale

Main Ingredients

  • 1 cup rolled oats
  • 3/4 cup all-purpose flour (or gluten-free flour blend for gluten-free version)
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, melted (or coconut oil for dairy-free)
  • 1 teaspoon vanilla extract
  • 3/4 cup mini marshmallows (plus extra for topping)
  • 3/4 cup chocolate chips (use dairy-free if needed)

Instructions

  1. Prep Your Ingredients: Preheat the oven to 350°F (175°C) and grease or line an 8×8 inch baking pan with parchment paper. Measure out your oats, flour, and sugar so everything is ready to go.
  2. Mix the Dry Ingredients: In a large bowl, combine the rolled oats, all-purpose flour, brown sugar, baking soda, and salt. Stir until they’re well blended and evenly distributed.
  3. Incorporate Butter and Vanilla: Gently melt the butter, then pour it into the dry ingredients along with the vanilla extract. Mix everything together until you get a crumbly, slightly sticky mixture with even coating.
  4. Add Chocolate Chips and Marshmallows: Fold in the chocolate chips and most of the mini marshmallows, reserving a handful for topping. These freeze-dried pockets of sweetness will give you that classic s’mores sensation in every bite.
  5. Press and Top: Press the mixture firmly into your prepared baking pan, making sure the surface is even. Sprinkle the remaining marshmallows on top to create a toasted finish after baking.
  6. Bake and Cool: Bake for about 20 to 25 minutes, or until the edges turn golden and the marshmallows on top are puffed and lightly browned. Let the bars cool completely before slicing to keep their chewy texture intact.

Notes

  • Press the mixture down firmly into the pan to prevent crumbly bars that fall apart easily.
  • Use fresh mini marshmallows for better melting and softer texture.
  • Do not overbake; bake just until golden to maintain chewiness.
  • Line your baking pan with parchment paper to easily remove bars without breaking.
  • Allow bars to cool fully before slicing to help them hold their shape.
