Ingredients

Scale

Dry Ingredients

  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Add-ins

  • 1 cup chocolate chips (semi-sweet or milk chocolate)
  • 1 cup marshmallows (toasted or regular)

Instructions

  1. Prepare the Dry Ingredients: In a large mixing bowl, combine the rolled oats, all-purpose flour, baking soda, and salt. Stir until evenly mixed to ensure consistent texture and rise in your bars.
  2. Cream Butter and Sugar: Using a hand mixer or stand mixer, beat the softened butter with brown sugar until the mixture is light and fluffy, about 2-3 minutes, creating a tender crumb.
  3. Add Egg and Vanilla: Beat in the eggs one at a time, then add the vanilla extract for flavor. The eggs bind the ingredients and enrich the dough.
  4. Combine Wet and Dry Ingredients: Gradually add the dry oat mixture to the wet ingredients, mixing until just combined. Avoid over-mixing to keep the bars soft and chewy.
  5. Layer Chocolate and Marshmallows: Spread half of the dough evenly into a greased 8×8-inch baking dish. Sprinkle a layer of chocolate chips and marshmallows over the dough, then top with the remaining dough to create a layered effect.
  6. Bake and Cool: Bake at 350°F (175°C) for 25-30 minutes, or until the top is golden and the marshmallows are lightly toasted. Let the bars cool completely before slicing to maintain their shape and gooey texture.

Notes

  • Use room temperature butter for better creaming with sugar and a fluffier dough.
  • Do not overbake; bars are done when edges are golden but center remains soft and chewy.
  • Press the dough firmly into the pan to create dense, chewy bars rather than crumbly pieces.
  • Allow the bars to cool fully before slicing to prevent marshmallows from oozing out.
  • Use fresh oats and butter to guarantee the best texture and flavor.
