Instructions

  1. Mix the Dry Ingredients: In a large bowl, combine rolled oats, chopped nuts, puffed rice cereal, and any seeds or dried fruit you want. Stir well to evenly distribute all ingredients and create the crunchy base.
  2. Prepare the Wet Mixture: In a microwave-safe bowl, gently warm the nut butter and honey or maple syrup just until smooth and pourable. Stir in vanilla extract to infuse a warm, aromatic flavor.
  3. Combine and Stir: Pour the warm nut butter mixture into the dry ingredients. Mix thoroughly until all oats and nuts are well coated and the mixture sticks together when pressed.
  4. Press the Mixture Into a Pan: Transfer the mixture into a lined baking dish or tray. Press firmly with a spatula or your hands to compact the mixture tightly, which helps the bars hold their shape.
  5. Chill Until Set: Refrigerate the pan for at least 1-2 hours to allow the bars to firm up. Once set, remove the slab and cut into bars or squares of your preferred size.
