Chocolate Cookie Crust
- 1 ½ cups crushed chocolate cookies (about 20 cookies)
- 5 tablespoons melted butter
Filling
- 1 ½ quarts chocolate ice cream, softened
- 2 tablespoons espresso or strong brewed coffee
Toppings
- 1 cup whipped cream
- Chocolate syrup or ganache, for drizzling
- ¼ cup chopped nuts or chocolate chips (optional)
- Prepare the Chocolate Cookie Crust: Crush the chocolate cookies into fine crumbs. Mix the crumbs with melted butter until the mixture resembles wet sand and sticks together. Press the crust mixture evenly into the base of a pie dish or springform pan. Chill in the refrigerator to set.
- Soften the Chocolate Ice Cream: Remove the chocolate ice cream from the freezer and let it soften for about 5-10 minutes until it is easy to spread but still holds its shape.
- Add Espresso or Coffee: Gently fold a splash of espresso or strong brewed coffee into the softened ice cream to enhance the chocolate flavor without overpowering the sweetness.
- Assemble the Filling: Spread the coffee-enhanced chocolate ice cream evenly over the chilled cookie crust. Smooth the surface with a spatula to create a flat, even layer. Return the pie to the freezer and freeze solid for at least two hours.
- Top with Whipped Cream and Garnishes: Once frozen, spread a generous layer of whipped cream on top of the pie. Drizzle with chocolate syrup or ganache and sprinkle with chopped nuts or chocolate chips if desired. Serve immediately or keep frozen until ready to serve.
Notes
- Use high-quality chocolate cookies to get a rich and flavorful crust.
- Soften ice cream just enough to spread to avoid a runny filling.
- Chill the crust thoroughly to prevent sogginess.
- Add espresso sparingly to deepen chocolate flavor without introducing a coffee taste.
- Freeze the pie adequately for clean slices and best texture.
